Butter Garlic Scrambled Eggs

Ingredients: 

  • 3 free-range eggs
  • 1 tbsp chilli flakes
  • 3 tbsp garlic (chopped)
  • 1 tsp pepper
  • 2 tsp Italian seasoning
  • 1 tbsp cornflour
  • 200ml milk
  • 1 tbsp butter
  • 1 tsp spring onions (finely chopped)
  • Sesame seeds (for garnish)
  • Salt to taste

Method: 

  • In a medium sized bowl, crack 3 of our free-range eggs.
  • Sprinkle in the chilli flakes, pepper, and half of the chopped garlic, and whisk together until combined.
  • Cook the mixture in a pan on low to medium heat until the eggs are just about cooked. Then, set them aside.
  • In the same pan, melt some butter on low heat, add in the remaining garlic, Italian seasoning, cornflour and milk.
  • Cook until the mixture forms a thick sauce, and add the scrambled eggs back into this sauce.
  • Gently fold in the eggs, until it's fully coated with the sauce.
  • Garnish with thinly sliced spring onions, sesame seeds, and serve with any bread of your liking.

Eggs have quietly made their way into mid-day meals and dinner through curries, wraps, fried rice, and even sandwiches. Some whisk them into dosa batter, while others stir them into rich gravies. No matter the cuisine, eggs blend right in.

Egg Pepper Roast 

Egg Pepper Roast

Packed with flavour and protein, this dish makes lunchtime both delicious and wholesome.

Ingredients:

  • 5 free-range eggs (boiled and cut in half)
  • 2 onions
  • 2 tbsp oil
  • 3 green chillies
  • ½ tsp turmeric powder
  • 1 tbsp red chilli powder
  • 1 tbsp garam masala powder
  • 1 tsp salt 
  • One handful of curry leaves 
  • Coriander leaves (for garnish) 

Method:

  • Heat oil in a kadhai, add curry leaves, and cook until they start splattering.
  • Add onions and green chillies, saute until light brown in colour. 
  • Add in some turmeric powder, red chilli powder and salt. Cook for 4-5 minutes. 
  • Now, add the free-range boiled eggs. 
  • Add in the garam masala and mix well. 
  • Transfer it to a dish and garnish it with coriander leaves.

Anda Ghotala

ANDA GHOTALA

A spicy delight of masala and eggs that is perfect for dinner. 

Ingredients:

  • 5 free-range eggs 
  • 2 onions (finely chopped) 
  • 3 green chillies (finely chopped) 
  • 2 tomatoes (finely chopped) 
  • 3 tbsp oil 
  • ½ tsp cumin seeds 
  • 1 tsp turmeric powder 
  • 1 tbsp red chilli powder 
  • ½ tbsp salt 
  • 1 tbsp garam masala 
  • Coriander leaves (for garnish)
  • Salt to taste

Method: 

  • Heat oil in a kadhai, add cumin seeds and cook until they start sizzling and are aromatic. 
  • Add onions, green chilli and saute it until light brown in colour. 
  • Add tomatoes to this. 
  • Lightly sauté and then add turmeric powder, garam masala powder, chilli powder and salt. 
  • Once tomatoes soften, crack 2 free-range eggs and scramble in this onion tomato masala. 
  • Now, grate 2 hard boiled free-range eggs into this scrambled mixture and mix well. 
  • Transfer the Anda Ghotala into a dish. 
  • In a pan, gently fry 1 free-range egg, place it on the Anda Ghotala and garnish with coriander leaves. 
  • Serve hot with toasted pav.
